Will says that one possibility in your area is Sully's Snowgoose Saloon, which is at around 61st & Phinney. I just read a couple of reviews, and if it's still there, sounds like what you're looking for (except, I think, the pool thing).
Stumbling Monk is all Belgian beers, folks play chess, it's mostly a talking place. Will says they don't have pool tables, either.
There's also the Hopvine Pub, which has local craft beers and good food that isn't too heinously expensive. It can get kind of close in there, but it's still all at conversational levels.
As to the just stumbling home thing, how about adding a "Taxi Me!" button as an option for those who were debating about the "Beer Me!" option? ;]
I know I'd certainly chip in toward a worry-free ride home for the celebrant!
